Pure Altitude, the first mountain spa

Here, nature is at work everywhere. In the dazzling gardens around the chalets, in the large vegetable garden and, of course, in the alpine garden which, thirty-five years ago, inspired Jocelyne Sibuet to create La Ferme de Beauté, the first mountain spa and the origin of Pure Altitude spas and cosmetics, at the cutting edge of plant-based dermo-cosmetics. The spa des Fermes, on the other hand, takes you with a snap of its fingers into an Alpine forest, undergrowth or riverbed, with its walls adorned with birch bark, moss or polished granite pebbles. As Charline, dietician and Goddess yoga teacher who organizes the "Pure Reconnexion" retreats, explains: "Pure Altitude retreats not only protect you from stress, but also optimize your shape, beauty and energy through walking, sports activities and yoga. Pure Reconnexion retreats for women, on the other hand, allow you to let go in a soothing, reassuring setting. It's a precious moment, all to yourself, where you can let out your emotions, such as joy or sadness. In summer, the yang season when the heart is in the mood, you can practice Ashtanga Vinyasa, Yin, Goddess, Kundalini... in the morning and at the end of the day in the gardens, amid the flowers and with your feet in the grass, with renowned teachers such as Elodie Garamond, founder of the Tigre Yoga Clubs, or Charline. As the days get cooler, you can savour the new ballet of colors playing out on the mountains, going for silent, meditative walks, knowing that in the evening, you can put down your emotions in talking circles. Part trailblazer, part philosopher, he reinvents a cuisine of well-being whose fundamentals then inspire the chefs at Maisons et Hôtels Sibuet, such as Mathieu Groshenry at Fermes de Marie. Because beauty also comes from within.

Pure Altitude, the cuisine of well-being

The Sibuet family has always paid close attention to their products, their origins, their quality and the seasons. An authentic mountain cuisine, generous in taste and benefits. "We're taking a real in-depth look at natural cooking, which is based on a number of principles and plants," explains Michel Lentz. These include low-fat and low-sugar products, which you can try out with your eyes closed with our chocolate mousse à l'eau, and delicious all-salted breakfasts. "There's no miracle product or recipe per se, but changing your diet for a week can really improve your health potential," he stresses. To rewrite culinary scores that are nonetheless resolutely gourmet, the chef combines various techniques, some of which have been used since the dawn of time. These include lacto-fermentation, in which food is placed in oxygen-free jars, usually with water or salt, so that it can be preserved indefinitely or almost indefinitely, while preserving the nutrients that are good for the body, and Essene breads, made from sprouted seeds. Great for breakfast with fruit or sheep's milk cheese. Added to this is the combination of different textures and cooking methods, and the use of seeds and plants gleaned from the nearby alpine garden of Les Fermes. These plants are used in a host of homemade preparations. These include kombuchas, fermented drinks that Michel Lentz makes himself from his own "mothers", fir, elderberry and apple vinegars, pear and verbena lemonades, syrups, infusions, powders and macerations. The idea is to bring nature and all its benefits back into Pure Altitude cuisine. As with everything else here.
